Americanized Ginger Peanut Soup

1 1/2 cup chopped Broccoli1 1/2 cup chopped Cauliflower1 cup chopped Onions1 T grated Ginger3 cloves minced or crushed garlic1/4 tsp Cayenne pepper 1/2 tsp Salt1/2 tsp Pepper2 T Olive Oil1 1/2 cup Vegetable Stock1 1/2 cup Water1 28-oz can diced Tomatoes6 T crunchy or smooth peanut butter
Saute onions in oil until soft. Add broccoli, cauliflower, ginger, garlic, salt and peppers and continue sauteing until veggies are just tender. Add stock and water, tomatoes, and peanut butter. Reduce heat and simmer for 20 minutes.
