tofu-egg scramble

Ingredients
1 Egg, fresh, larg1 1" slice Tofu, soft or medium - well drained1 tbsp. Salsa - your favorite2 Corn tortillas Salt to taste1 -2 tsp. Olive oil
Directions
Heat olive oil in non-stick fry pan until hot, but not smoking. Add tofu and break up in pan with spatula or back of spoon. Add salt and salsa. Stir in pan allowing most of moisture to evaporate. Add egg and scramble with tofu mixture no more than 1 1/2 minutes.
Meanwhile you can heat corn tortillas over flame if you have gas burners, otherwise wrap in cotton kitchen towel and microwave for 45 sec.
Place half tofu-egg mixture in each tortilla for 2 soft breakfast tacos.

Alternatively, plate tofu-egg scramble and serve with tortillas on side. You can garnish with avocado and more salsa.
