1 can of creamed corn1 can of diced tomatoes1 can of kidney beans or black beans (drained and rinsed)1 lb of 93% lean ground beef1 cup shredded cheddar cheese1 package low sodium taco seasoning1/2 cup of chopped onion1 package of corn bread mix
Brown ground beef and drain. Add everything else but the cornbread mix. Place in a 13 by 9 casserole dish. Prepare cornbread mix according to package directions. Pour batter over ingredients in casserole dish, making sure not to mix it in with the cornbread and also try to get the sides covered. Bake at 350 for 35-40 min or as directed on the cooking instructions for cornbread. Let cool for 15 min. before cutting.

This recipe was very good - and super easy to throw together. I used Rotel instead of diced tomatoes and I used pinto instead of kidney or black beans. I scraped my cornbread to the side so next time I'll probably just not put it on there (tho everyone else seemed to enjoy it)... LOVE IT!!!!! - 6/6/20
