Ingredients
11 Cups cooked whole wheat Fusilli or Routoni Pasta1 Large Red Pepper1 Large Green Pepper1 Large Red onion2 Cups Grape Tomatoes or Plum Tomatoes 1/3 Cup Olive Oil1 Cup Graded Parmesan Cheese2 Tablespoons Garlic4 Tablespoons Oregano1 Teaspoon Ground Black PepperFor a variation almost any vegetable could be substituted or added in addition to the ones above some of my favorites are; Strips of carrots Sliced cucumbers Sliced zucchiniSliced celeryBlack olives
Directions
Cook drain & cool 1/2 bag of Fusilli or Routoni Pasta
Slice peppers & onions & plum tomatoes in to long strips
Leave Grape Tomatoes whole
Add in olive oil & stir until everything is covered
Add cheese & spices & stir again once everything is well mixed store in the fridge until you serve it
Makes 40 - ½ cup servings
