Red Thai Tofu curry

Ingredients
1 packet of tofu (250g)1 red pepper, sliced10 baby corn, each sliced in half3 tbsps Thai red curry pastehalf a can of light coconut milk1 onion, diced
Directions
Shallow fry Tofu in oil, then drain off the excess oil and throw vegetables into the pan with the tofu and stir fry. Add 3 tbsps of red curry paste and combine. Then add half a can of light coconut milk and heat through while mixing together.

Serve with brown rice.
