French bread with Bread machine

Ingredients
1 cup plus 2 tbsp. water at 80 degrees1 tbsp. plus 1 tsp. olive oil1 tbsp. plus 1 1/2 tsp. sugar1 tsp. salt3 1/4 cups bread flour (use unenriched, unbleached plain white flour)2 tsp. active dry yeast
Directions
This makes one 1.5 lb loaf of french bread. Place all wet ingredients in the bottom of pan in bread machine. Add them in the order listed. Put in sugar, salt, then flour on top. Make small well in flour and put in 2 tsp. active dry yeast. Set machine to do french bread at 1.5 lb. loaf. I put the crust either on light or medium. Set on counter to cool after baked and place in gallon ziplock baggy to store. Makes large slices so I make the slice and cut it in half to make sandwiches, that way they aren't huge.

    This bread was so good my picky kids had seconds! The crust was crisp and chewy, and the bread was light and fluffy-- one of the best bread machine recipes I've come across. My dough was a little dry, so I ended up adding more water-- about 2 tbsp. - 1/21/13
