Apple Cake

Ingredients
4 c peeled, cored chopped apples (about 8 medium apples)2 c white sugar2 c flour1 1/2 tsp baking soda2 tsp cinnamon1 tsp salt 2 eggs1/2 c applesauce, unsweetened1/4 c oil2 tsp vanilla(1 c nuts - pecans, walnuts - optional, not in calorie count)
Directions
Preheat oven to 350 F
Core, peel, and chop the apples into a large bowl with the sugar and mix with a spoon (mixer will mash up apples). Add all remaining dry ingredients and stir well.
In a separate bowl beats eggs, applesauce, oil, and vanilla.
Stir egg mixture into apple mixture (then add nuts if using). Dough will look runny, like pancake batter.
Bake in 9 x 13 pan for 50 minutes. Top will be brown and moist. Serve warm (with sauce if you have it!)

    Delicious! I used only 1 cup sugar. I cut the oil in half, and simply used more applesauce. Next time, I'll use only 1/2 cup of sugar. I'm going to add a few cranberries too! - 2/23/13
