Streusel Apple Muffin

Ingredients
1/2 cup bown sugar1/2 cup applesauce1/4 cup olive oil1 egg1 tsp. vanilla1 cup flour1 tsp. baking soda1 tsp. baking powder1/2 tsp. cinnamon1 cup diced peeled appleTopping Ingredients:2 tbsp. brown sugar2 tsp. flour1/2 tsp. cinnamon1 tsp. butter
Directions
Preheat oven to 374 degrees F. Spray 12 muffin cups with nonstick spray. In large boel, combine sugar, applesauce, oil, egg and vanilla till well mixed. Combine flour, baking soda, baking powder and cinnamon; stir into bowl just until mixed. Stir in apple. Pour into muffin cups, filling two-thirds full.
Topping: In small bowl, combine sugar, flour, and cinnamon; cutin butter till crumbly. Sprinkle evenly over muffins. Bake for 20 minutes or till tops are firm to the touch.

    They cooked well and smell delicious -- on the # of muffins the recipe made: I used a scant 1/4 c. for each muffin. I probably had a little more that 1 c. chopped apple, whch added some bulk, and I got 12 even. But I did scrape up *every last drop* of batter. - 9/20/09
