Cabbage Lasagna

1 medium cabbage - boiled1 lb turkey sausage2 tomatoes - diced2 stalks celery - chopped5 medium mushrooms - sliced1 small onion - diced3 cloves garlic - chopped1 small container part-skim ricotta cheese1 cup shredded part-skim mozzarella cheese1 egg1 can Hunt's Spaghetti sauce (Garlic & Herb)Italian seasoning to taste
Boil cabbage and set aside to cool.
In large saute pan crumble & cook turkey sausage.
When sausage is nearly cooked add vegetables and saute until sausage is cooked and vegetables are tender.
Add Italian seasoning and spaghetti sauce to sausage & vegetables. Let simmer for 10 mins.
Mix ricotta cheese, egg and Italian seasoning in small bowl and set aside.
In 9"x13" baking pan place 1 layer of cabbage leaves. Layer with 1/2 of sauce/meat/vegetable mixture and then 1/2 of the ricotta mixture. Sprinkle on 1/2 cup of mozzarella cheese. Place another layer of cabbage, sauce and cheeses.
Cover with tin foil and bake at 350 degrees for 30 minutes.
Remove foil and bake for an additional 15-20 minutes until cheese is browned.
