Fried Green Tomatoes

3 Med. Green tomatoes (organic)1/4 cup yellow cornmeal (organic)2 tbsp. organic flour4 oz. buttermilk (organic)SaltPeppercanola oil for frying (enough to barely cover pan)
Slice the tomatoes to whatever thickness you want and place them in the buttermilk to soak.
Mix Cornmeal, flour, salt and pepper in a bowl and set aside.
Begin heating the oil in a cast iron frying pan and start to take the tomato slices from the buttermilk allowing to drain off excess and dip in the cornmeal mixture dredging it on both sides.
Place in hot oil in the frying pan and cook until golden.
The pan should be on about med. heat so that the tomatoes do not cook too quickly.
Remove from pan and allow to drain on paper towel or on wire rack to remove excess grease.
Makes 4 servings.
