Rice Breakfast Pudding Silver Hills

Ingredients
2 cups cooked brown rice1/4 cup dates or raisins1/4 tsp cinnamon1/4 cup dried or fresh pineapple (optional)1/2 cup cashews2/3 cup water or enough water to blend cashews1 tbsp honey or maple syrup (optional)
Directions
Makes 6 half cup servings

Precook rice

Preheat oven to 350

Mix rice, raisins, cinnamon and pineapple in large bowl

Blend cashews, water and 1 tbsp honey if desired until creamy

Add blended ingredients to rice mixture and combine well

Place in well oiled casserole dish and bake for 30 minutes

Serve warm with pear milk (recipe in cookbook) and granola if wanted.
