Grilled ham, brie, and arugula sandwich

Ingredients
1 tbsp. olive oilJuice and finely grated zest of lemon1 garlic clove, minced.25 tsp. sugarsalt and freshly ground black pepper2 serving of bread2 oz. Brie cheese, cut into slices2 servings of ham, thinly sliced8 arugula leaves
Directions
Prepare a charcoal or gas grill for medium heat (350-450 degress).

Put olive oil, the lemon juice and zest, garlic, sugar, salt and pepper to taste in a blender and pulse to combine.

Brush (or spray) both sides of 4 pieces of bread with olive oil; sprinkle with salt and pepper. Cover gril and cook 2 minutes. Turn bread over, top with cheese, cover and grill until cheese melts, 1-2 minutes. Remove from grill. Top cheese with ham.

In a large bowl toss arugula with enough vinaigrette to moisten, and arrange a handful on each sandwich. Drizzle reamining vinaigrette over sandwiches.

    This was so good and fresh! Substiuted red leaf lettuce for the argula because we couldn't find it in the grocery store. Will definitely eat this again. - 11/6/08
