Pineapple Lane Cake

2 cups granulated sugar2 cups all purpose flourOne 20-oz can of crushed pineapple w/ juice2 eggs, large1 tsp vanilla2 tsp baking soda1/2 tsp of salt (I use Morton's Lite Salt)1 Tbsp ground cinnamon
Preheat the oven to 350 degress.
In a large mixing bowl, cream together the sugar and eggs until the sugar is dissolved. Add the pineapple and vanilla and combine. Add the dry ingredients and mix well.
Pour into a greased, floured 13" x 9" pan and bake four 40 - 45 minutes, or until a skewer comes out of the center clean.
Makes twelve 3.25" x 2.25" pieces of cake per 13 x 9 pan.

I just made this and it tastes delicious! My husband and I had our doubts since there were a lot of ingredients and he's not a huge fan of pineapple but it was quite good. I didn't have the right size pan so the middle didn't cook properly, i'll have to invest in a new one! Will make again. - 2/19/11
