Pumpkin Spice Protein Muffins

1 c Whole Wheat Flour1/4 c Rolled Oats1 c Canned Pumpkin1/3 c Motts Organic Unsweetened Applesauce1/3 c Better'n Eggs liquid Egg Substitute1/3 c Packed Brown Sugar1/3 c Sugar in the Raw.5 cup chopped Walnuts1 very ripe banana, mashed.5 cup vanilla protein powder.5 tsp Baking Soda1 tsp Baking Powder1 tsp Ground Cinnamon1/3 tsp Ground Ginger1/3 tsp ground Nutmeg,1/3 tsp Ground ClovesDash of Salt
-preheat oven to 350
-line muffin tins
-combine flour, oats, baking powder, spices, baking soda and salt in a large bowl.
-whisk until well mixed.
-combine remaining ingredients (except nuts) in a large mixing bowl; beat until smooth.
-gradually beat in flour mixture until just combined
-fold in nuts
-spoon into tins
-bake 20 - 25 mins
-cool on wire rack
Makes 16 medium muffins or 3 dozen mini muffins. Enjoy!
