Crockpot Fajitas

Ingredients
4 boneless, skinless chicken breasts1 sliced red bell pepper1 sliced green bell pepper1 sliced onion2 tsp taco seasoning.5 cup salsa8 fat free flour tortillas2 cups shredded lowfat cheddar cheese
Directions
place chicken breasts in crockpot, sprinkle with taco seasoning, layer on peppers and onions then top with salsa. Cook on low for 5-8 hours.
Remove chicken and shred with 2 forks. place peppers and onions in a strainer to remove the juice. Heat tortillas and plce 1/2 chicken breast in and top with 1/4 cup cheese and 1/8 pepper and onion mixture.

    I made this tonight. I used a different recipe which called for lime juice and chicken broth. Next time I will omit as it was very water and the seasonings did not come through. Extremely easy though!! - 4/5/10
