Baked Chocolate Mousse

1 c skim milk3 oz unsweetened chocolate, chopped1/2 c liquid egg1 c sugar substitute2 teaspoons vanilla extract
Makes 4 servings
1. Heat the milk in a saucepan over medium heat.
2. Preheat oven to 325 degrees F.
3. In bowl, whisk together liquid egg, sugar substitute, and vanilla. Gradually whisk the milk mixture into the egg mixture until combined. Pour into 4 custard cups or ramekins and place the cups in a baking dish. Fill baking dish with enough boiling water to come halfway up the sides of the ramekins/custard cups.
4. Bake for about 25 minutes or until a knife inserted in the center of a mousse comes out creamy.
Storage: let cool completely before refrigeration. Cover with plastic wrap and refrigerate for up to one week.
