High Protein Pancakes or Waffles

Ingredients
1 cup low fat cottage cheese4 Eggs1/2 cup flour (soy) or whole wheatdash of salt1/4 cup olive oil1/2 cup light soy milk (can use low fat regular milk)1 tsp vanilla
Directions
Combine ingredients in a blender
Whirl at high speed 1 minute. Bake on lightly greased griddle or waffle iron.
Makes about 8 - 10 med sized pancakes.

    This worked using the thin waffle-maker. Did double the flour, as it was so much liquid. It reminded me of crepe - had that eggy taste, but nice crispy outside. - 4/7/13
