Rice Con Queso

Ingredients
2 cups hot cooked rice3/4 cup canned black beans, rinsed and drained2 3-oz. cans chopped green chiles1/2 red bell pepper, diced1 1/2 cups plain notfat yogurt2 teaspoons ground cumin1/2 teaspoon crushed oregano1 cup shredded low-fat Cheddar cheese
Directions
Mix toegether all ingredients well and turn into a greased 1 1/2-quart baking dish. Cover and refrigerate if made the day ahead. Bake in 350 degree F. oven, uncovered for 20-30 minutes, or until heated through.


Serves 4 (approximately 2/3 cup per serving)
