Veggie Hashbrowns w/Egg

Ingredients
2 cups hashbrowns1 cup egg substitute1/2 cup onions, chopped 1/2 cup cheddar cheese, shredded fine1 T olive oil
Directions
Brown onions in olive oil, just until soft. Add hash browns and cover. Cook until hash browns are almost done, add egg and stir completely, until egg is almost done. Then add cheddar and stir until melted, remove from heat and serve.

Makes two one cup servings.
