Easy Baked Coconut Chicken

Ingredients
3 chicken breasts, no skin or bone, cut in half (so 6 halves)1 cup coconut flakesSpray Butter (zero calorie kind)
Directions
Pound the 6 halves of chicken breasts thin.

Spray each breast with 5 sprays of spray butter on each side.

Coat each breast evenly with coconut flakes, distrubiting evenly.

Bake on aluminum foil-covered plan for 40- 45 minutes (yes- that long!) at 425. The moist coconut keeps the chicken from drying out.

I like to put this on salads when I'm through.
