WW Veggie Soup

Ingredients
2 med garlic cloves, minced1 med onion, diced2 med carrots, diced1 med sweet red pepper, diced1 med stalk of celery, diced2 small zucchini, diced2 cups green cabbage, shredded2 cups swiss chard, chopped2 cups cauliflower, small florets2 cups broccoli, small florets2 tsp thyme, fresh, chopped6 cups vegetable broth2 Tbsp parsley, or chives, chopped1/2 tsp salt, or to taste1/4 tsp black pepper, or to taste2 Tbsp lemon juice, optional
Directions
Place garlic, vegetables, thyme and broth into a large pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer 10 min.

Stir in parsley or chives, season to taste.

Makes about 12- 1 cup servings.
