Black Bean and Sweet Potato Burrito

Ingredients
2 tablespoons extra virgin olive oil2 cloves garlic, minced1 medium onion, chopped1 15oz. can black beans, drained1-2 tsp ground cumin (to taste)1 large sweet potato (or three 5" smaller ones)splash of low-fat milk or soy milk5 whole-wheat tortillas
Directions
Scrub and pierce sweet potato with fork. Wrap in paper towel and place on microwave-safe dish. Cook potato in microwave according to your microwave's directions. (Cooking times vary, but my microwave cooks a large sweet potato in about 10 minutes on high).

While sweet potato is cooking, heat olive oil in large skillet over medium heat. Add minced garlic and onion to pan. Saute until the onion starts to become translucent. Pour in black beans, season with cumin. Reduce heat to low.

When sweet potato is done cooking, CAREFULLY remove from microwave (it will be HOT). Cut in half lengthwise and carefully scoop out flesh into a medium bowl. Add a splash of milk or soy milk and mash. You may need to add more milk depending on what consistency you're desiring your sweet potato to be.

Heat tortillas in microwave (follow package directions). To each tortilla, add 1/5 of the sweet potato mixture. Spread all around tortilla so it coats most of the tortilla. Add 1/5 of the bean mixture, then roll into a burrito and enjoy.
