Holly's Pumpkin Bars

3 eggs1 cup white sugar2/3 cup brown sugar1 cup applesauce1 29 oz. can pumpkin puree1 cup whole wheat flour1 cup all purpose flour1 teaspoon baking soda1 teaspoon baking powder1 1/2 tsp. cinnamon1/2 tsp. ground nutmeg1/4 tsp. ground clove1 tsp. salt4 oz. light cream cheese1/4 c. butter1 teaspoon vanilla exctract3 cups powdered sugar
Preheat oven to 350 degrees F.
In a medium bowl, mix eggs, sugar, applesauce and pumpkin. Mix until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, clove and salt. Stir into the pumpkin mixture until thoroughly combined.
Spread the batter evenly into a prepared 10 x 15 inch jelly roll pan. Bake for 25-30 minutes in preheated oven. Cool before frosting.
To make frosting, cream together the cream cheese and butter. Stir in vanilla. Add powdered sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars.
Cut into 24 squares.

Making these as we speak--my little sister loves helping me bake, and had a blast with the sifter.
used splenda instead of sugar, and ended up buying light cream cheese frosting instead of making my own.
