Gingered Red Lentil Soup

Ingredients
Onions, raw, 1 large dicedGinger Root, 4 tablespoons mincedGarlic, 6 clove mincedRed Lentils, 2.5 cupSweet potato, 2 sweetpotato, peeled & dicedCarrots, raw, 2 large diced Water, 6 cup (8 fl oz) Chicken Broth, one canSherry, .25 cupLemon juice, 2 tbspsSalt & White Pepper, seasoningsPlain Yogurt (optional)
Directions
Oil spray a large stock pot and heat over medium heat. Put in ginger, onions, and garlic with a little of the broth to keep from sticking. Saute until onion is tender, about 4 minutes. Add in potatoes, carrots, lentils, water, and remaining broth. Heat to boiling. Turn heat down and partially cover. Simmer for 45 minutes or until lentils are very tender. Cool slightly. Puree with immersible blender or remover to a standing blender and then return to pot. Add in sherry, lemon juice, and seasonings to taste. Simmer for 30 minutes. Serve hot. Top with a dollop of yogurt if desired.
