Stuffed Poblanos with Black Beans

8 Poblano Peppers (Look for the largest ones)2 pounds ground extra lean turkey1/2 cup cooked brown rice2 tsp fresh or ground thyme1 tblsp ground cumin1 can (15oz) fire roasted chopped tomatoes3 handfuls of chopped cilantro4-5 chopped scallionsjuice of 1 limesalt and pepper 1 tblsp of each1 tblsp smart balance light butter1 1/2 cups chicken stock1 cup skim mozzarela cheese2 cans (15 oz each) black beans
Prepare peppers for stuffing by cutting a thin slice off one side leaving stem and end intact clean out the seeds.
finely chop the removed pieces and add to bowl with turkey, rice, thyme, cumin, tomatoes, cilantro, scallions, lime juice, salt, pepper. mix well together. Stuff each pepper and add to a baking dish. add a splash of chicken stock to baking dish and cover with tin foil. Bake in oven at 400 for 45-50 min.
About 10 minutes before peppers are done. Heat black beans in pan. In a seperate pan melt butter with 1 tblsp of flour after they have combined into a paste add chicken stock let thicken then add mozzarella cheese to make a sauce.
on a plate add less than a cup of black beans, 1 stuffed poblano on top of the beans and a drizzle of the cheese sauce to the top of the pepper. and serve.
