Stuffed red pepper with chicken sausage

Ingredients
1 large red bell pepper1 cup brown rice1 link aidells portabello mushroom chicken/turkey sausage0.25 cup chopped onion3 large mushrooms2 oz fat free cream cheese0.5 cup salsasalt and pepper to taste
Directions
Cook brown rice according to package. While waiting, cut red bell pepper down the middle lengthwise and remove seeds. Also, chop and saute the onion, mushrooms, and chicken sausage link. Once the rice is cooked, stir in onion, mushrooms and chicken sausage. Add cream cheese and salsa and stir. Cook red pepper halves in boiling water for about 2 minutes, then remove and place in oven pan. Scoop rice mixture into each pepper half. Cook on 375 degrees for about 25 minutes. Makes 2 servings, but you will probably have extra of the rice mixture leftover to snack on later! Cooking time will take a bit more than an hour due to the length of time the rice takes to cook.
