Prawn Soup

Ingredients
6 oz Shelled Prawns2 cups Fat Free Chicken Broth1 bunch of Bok Choy Chopped2 tsp fresh grated Ginger1 tsp fresh chopped Garlic1/2 cup sliced Green Onions1 medium square cut Bell Pepper1 cup sliced Mushrooms1 tbsp Fish SauceJuice from 1 fresh squeezed Lemon
Directions
---Mix all ingredients into medium pot except for the prawns and bring to slow boil.
---Turn the heat low and allow to simmer until the bok choy has wilted and is tender 5 to 7 minutes.
---While the stock is simmering, clean and shell the prawns if not already done.
---Add the prawns once the bok choy has reached an acceptable tenderness and cook until pink, usually about 5 minutes.
---Be carful not to over cook the prawns or they get too chewy.
