Pumpkin Patch Muffins

1 cup Canned Pumpkin1 1/4 cups Splenda for Baking1/2 cup Water1/2 cup Extra Light Olive Oil2 Eggs1 2/3 cups Whole Wheat Flour1 tsp Baking Soda1 tsp Cinnamon1/2 tsp Salt1/2 tsp Baking Powder1/4 tsp Nutmeg
Heat the oven to 350*. In a mixing bowl, combine the pumpkin, sugar, water, olive oil, and eggs. Beat until well mixed.
Measure the flour, baking soda, cinnamon, salt, baking powder, and nutmeg into a separate bowl, then stir until combined (a great job for kids). Slowly add the pumkin mixture to the dry ingredients, strirring until just combined.
Spoon the batter into a 12-cup muffin tin lined with paper baking cups. Bake the muffins for 25 minutes. Cool for at least 10 minutes, then serve.
Serve warm. Makes 12 servings.
