Cashew Based Yellow Curry with Tofu and Green Beans

Ingredients
2 Tblspn Earth Balance or Unsalted Butter3 Tblspn Curry Powder1.5 Tblspn Ground Cumin Seed1/2 Tsp. Cayenne Pepper(1/2 Tsp. Salt, optional)1 Tblspn Ginger Root, finely Chopped 1 Medium yellow or red onion, finely chopped2 cloves garlic, finely chopped1 cup string beans, trimmed and chopped in halves or thirds1 block tofu cut into bite size squares (or 2 lbs of chicken, meat chopped into bite size pieces)1 can crushed tomatoes3/4 cup low fat yogurt, plain3/4 cup cashews2-3 tblspn cilantro.
Directions
Makes 6-8 1/2-3/4 of a cup servings
In a large skillet heat Earth Balance until melted (don't burn!)
Add garlic, ginger and onions sauteing for about 5 minutes until onion is translucent.
Add Curry, Cumin and Cayenne and mix well to toast spices for 2-3 minutes.
Add green beans and tofu stir to coat with curry powder mixture.
Add crushed tomatoes, allow tomatoes to begin to bubble, add cilantro and lower heat. Simmer for 8-10 minutes.
(If cooking w/ chicken or meat: Add cilantro cover and simmer until meat is cooked- 20-35 minutes)
Chop cashews into coarse powder in a food processer or coffe bean grinder.
Add cashews and yogurt, and stir allowing the sauce to thicken. Cook on low heat for 5 minutes.

Garnish with cilantro
Serve with brown rice.
