Chocolate Chip Pumpkin Bread

2 c sugar 1 can(28oz) Pure Pumpkin Puree1/4 c Sunsweet Lighter Bake1/2 c Fat-free Sugar-free Vanilla Pudding4 lg. Egg Whites3 c All-purpose Unbleached White Flour2 tsp Ground Cinnamon1 1/4 tsp Lite Salt1 tsp Baking Soda1 c Dark Chocolate ChipsCooking Spray
Preheat oven to 350. Combine first 5 ingredients in a large bowl, stirring well w/a whisk. Lightly spoon flour into measuring cups; level w/a knife. Combine flour, cinnamon, salt, & baking soda in a medium bowl, stirring well w/a whisk. Add flour mix to pumpkin mix, stirring just until moist. Stir in Chocolate chips. Spoon batter into 2 (8"x4") loaf pans coated with cooking spray. Bake at 350 for 1 hour and 15 minutes or until wooden pick inserted in the center comes out clean. Cool 10 minutes in pans on a wire rack, remove from pans and let cool completely on wire rack. Make 32 servings (16 per loaf).

It is a fruit puree that replaces oil in reciepes. Kind of like applesauce, but won't leave a flavor that sometimes applesauce can leave. It can be founf in the baking section of most stores, were the spices, flours, sugars &/or oils are. Sunsweet is the brand.
