Breakfast Skillet

1 Tbs canola oil1 med potato, sliced thin1 cup sweet potato, sliced thin1/4 cup diced onion4 oz turkey sausage3/4 cup diced eggplant1 Tbs fresh sage, finely chopped1 tsp fresh rosemary, ground1/2 tsp (kosher) salt1/4 tsp (fresh ground) black pepper2 eggs (Omega 3), beaten3 Tbs salsa
Makes 3 servings, about 1 cup each
Heat oil over high heat in heavy skillet. Add white and sweet potatoes, saute for 3-4 min. Add the sausage and onions, saute until sausage is cooked all the way through - about 3-4 minutes. Turn heat down to med, add eggplant and seasonings. Saute another 3-4 minutes. Move everything to one side and add the egg. Allow it to cook most of the way through, stirring occasionally to break it up. When almost cooked, mix thoroughly. Serve, topping with 1 Tbs salsa.
