Caribbean Salsa Chicken

Ingredients
3 boneless, skinless chicken breast, cut into bite size pieces2 tsp olive oilsalt and peppter1 1/2 cups thick hot salsa1/3 cup orange marmalade2 tbsp brown sugar2 tbsp lime juice1/4 tsp allspice2 cups cooked rice
Directions
Heat oil in large skillet over medium-high heat. Add chicken and season with salt and pepper. (You can add extra chopped onions or peppers at this point.) Cook until chicken is no longer pink.

Combine salsa, marmalade, brown sugar, lime juice and allspice together. Add to chicken and stir well. Bring to a boil then reduce heat to low. Cover and simmer 5-10 minutes, stirring occasionally.

Serve over rice.

Makes 4-5 servings.
