Turkey Chili

12 oz lean ground turkey2 medium onions3 cups beef broth or stock3 cloves garlic1 14 oz can diced tomatoes1/3 can tomato paste1 medium bell pepper2 portabella mushrooms2 cans black soy beans1 to 2 Tbsp chili powder - medium1 Tbsp cider vinegarsalt and pepper to tasste
Brown the ground turkey (remove excess fat). Add chopped onions and garlic and cook on medium until onions are soft. Add broth, tomatoes, tomato paste, and spices. Bring up to temperature and simmer, covered for 1 1/2 hours. Add pepper, beans and mushrooms. Simmer for 1 hours. Taste, add salt and pepper and more chili powder as needed. Tastes best the next day.
1/2 cup of black soy beans have 8 g carb and 6 g fiber. The brand I found is Eden Organic and can be found canned with the other beans (usually in a regular grocery store or a health food store)
