Tuscan Vegetable Soup with white beans

Ingredients
1 cup white beans2 tbsp olive oil1 large onions, chopped4 cloves garlic2 tbsp chopped fresh thyme1/2 head green cabbage, chopped 1/2 inch pieces1/2 head red cabbage, chopped2 cups chopped fresh tomatoes4 stalks celery, chopped4 medium carrots, chopped2 large potato1/2 cup fresh basil2 cups sliced zucchini10 cups vegetable broth
Directions
Soak beans in water overnight. Heat olive oil in large pot, add onions thyme and garlic and saute 5 mins. Add green cabbage, tomatoes, celery and carrots saute 10 mins. Add 10 cups stock, beans, potatoes and basil simmer and cook for 1 hour. Add red cabbage and zucchini cover and simmer until vegetables are tender. Add salt to taste. Serve with fresh whole wheat bread.
