Coconut-Apricot-Almond Macaroons

Ingredients
2 3/4 cups Shredded Sweetened Coconut3/4 cup Sugar1/4 cup Flour1/4 tsp. Salt4 each Egg Whites1 tsp. Vanilla or Almond Extract1 cup Almonds, chopped1 cup Dried Apricots, chopped
Directions
Preheat oven to 325F degrees.
Spray baking sheets with pan-release.

In a large mixing bowl combine the coconut, sugar, flour and salt. Stir in the egg whites and vanill or almond extract. Add the chopped almonds and dried apricots. Drop small spoonfuls onto the prepared baking sheets.
Bake at 325 degrees for 20-25 minutes or until the edges are lightly browned. Remove the Macaroons from the baking sheets immediately and cool. Makes approximately 30 Macaroons.
