Low Fat Mashed Sweet Potatoes

Ingredients
4 Medium Sweet Potatoes, Peeled and Cubed1/2 Cup Orange Juice1 tsp Orange Zest1 tbs Brown Sugar1/2 tsp Cinnamon1/2 tsp Ground Ginger
Directions
Bring a large pot of water to a boil. Add Sweet Potatoes and cook for 20-25 minutes until tender. Drain Sweet Potatoes: Add Orange Juice, Orange Zest, Brown Sugar, Cinnamon and Ginger. Mash until smooth.. (I use a fork)

Ready to serve.

    To change the calories - go back to your Recipe list. On the right side of each recipe is "delete" "edit" buttons. Hit edit, and you can go back and re-edit the recipe. Either an ingredient go missed on Add an Ingredient or the serving amount is wrong. Hope you get it fixed. - 11/24/09

    I really liked this, however I will reduce the orange juice some. For me it overpowered the sweet potato a bit. - 11/22/08
