Blueberry Muffins, Prize Winning (1 srv=1 muffin)

Ingredients
3 TB lite butter1 c. Xylitol1/4 c. egg beaters1.5 c. white flour.5 c wheat flour3 TB flaxseed2 tsp baking powder3/4 c. skim milk1.5 tsp vanilla1/2 tsp salt1.5 c. frozen blueberries
Directions
Cream the butter and Xylitol. Add eggs and vanilla. Mix dry ingredients in separate bowl, then add the dry ingredients alternately with the milk to the butter mixture. Stir in blueberries. Makes 14 muffins.

Bake at 375* for 25-30 minutes.
