Lentil Soup with Apricots

Ingredients
Lentils, 2 cup8 Cups WaterMinced Onions, 2 cupGround Cumin, 2 tspDry Mustard, 2 tspMinced Garlic, 2 Tbl Minced Dried Apricots, 1 cupSalt to tastebalsamic vinegar, 1/4 cupBlack Pepper and/or Cayenne to taste
Directions
Place lentils in soup pot or dutch oven with water; bring to a boil. Cover, lower heat to simmer, and cook for about 15 minutes

Add onion, cumin and mustard; continue to simmer, covered, until the lentils are very soft (about 15 more minutes). Add more water if it is too thick.

Add garlic, apricots, and salt to taste. Cover, let simmer another 15 minutes or so.

Stir in vinegar, add Bloack pepper and/or cayenne if desired.

Serve hot. Soup will keep for several days, or can also be frozen.
