Slow Cooker Coconut Beef Curry

Ingredients
2 lb Beef chuck, arm pot roast2 large Onions, quartered1 12 oz. can Coconut Milk2 cloves Garlic, minced2 T. Grated fresh ginger2 tsp Curry powder1 tbsp Coriander seed, ground2 T. Brown Sugar1 T. chili pepper paste otr flakers (or to taste)Salt and pepper to taste
Directions
Sear beef quicklly on high heat to brown on all sides, but not to cook. Put in crock pot with garlic and onions. Combine coconut milk with spices and pour over all. Cook low 6-8 hours and high 3-5.

    Wow. Finally a beef curry recipe with flavor AND tenderness. The spices were very well-proportioned. I added bamboo shoots, a red bell pepper, fish sauce and mushrooms. Served with jasmine rice.

    None of these additions were totally needed. I cooked 6 hours on low heat, which produced very tender - 2/5/13
