Ingredients

    1 lb dried Lentils
    2 lbs ground Lamb
    1 Onions, finely chopped
    4 cloves Garlic, minced
    1-1/4 tsp minced Ginger Root
    1 can Chicken Broth 99% Fat Free
    1 can crushed Tomatoes
    Juice from 1 Lime
    1 Tbsp ground Coriander
    1 Tbsp ground Cumin
    1 Tbsp ground black pepper
    1 Tbsp Garam Masala
    1 tsp Cayenne
    1 Tbsp Tumeric
    1 (10 oz pkg) frozen chopped Spinach
    2 cups plain Yogurt - (greek or organic is best)

Directions

Brown lamb with a small amount of the spices and set aside. Reserving a bit of the fat from the lamb, saute the onion, garlic and ginger until the onion begins to look translucent.

Add all other ingredients (except yogurt). Add 4-6 cups of water. Bring to a boil and simmer for 60 minutes.

Stir yogurt into the pot just before serving.

Makes 10 2-cup servings

Serve with greek pita bread; warmed in oven.
