Introduction

I have 1 serving of this to fill half a dinner plate and then fill the other half of the plate with a green salad. I have 1 serving of this to fill half a dinner plate and then fill the other half of the plate with a green salad.
Number of Servings: 4

Ingredients

    260g uncooked minced / ground beef
    1 medium carrot
    1 medium onion
    400g rice (cooked weight)
    1 medium can of chopped tomatoes
    2 tablespoons of curry powder (adjust to taste)

Directions

Makes 4 small servings. But makes a great meal when served with salad.

Cook the rice in the microwave or on the hob.

Chop the carrot, and onion.

Brown the minced beef in a pan without fat. When cooked drain the fat away.

Add the minced beef, vegetables and can of chopped tomatoes and curry powder to the pan.

Put a lid on the pan and simmer for 20 mins until the carrots are soft. Add water to the pan if necessary.

Serve with rice and salad

    Thanks for sharing this! I am not a huge curry fan, so (as suggested), I seasoned to taste and added some powdered habanero peppers. Yummy! - 7/31/09

    This is a fantastic recipe. The only differences in mine are I used chopped red bell pepper instead of a tomato, and I used a lot more curry than the recipe calls for. Amazing. - 8/31/09
