Bethenny Frankel's Guilt-Free Chocolate Chip Muffins

Ingredients
1 cup applesauce1 teaspoon canola oil1/2 cup sugar in the raw1teaspoon vanilla extract1/4 teaspoon almond extract3/4 cup oat flour1/3 cup unsweetened cocoa powder2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/8 teaspoon ground cinnamon1/2 cup semi-sweet chocolate chips
Directions
1. Preheat the oven to 350 degrees. Line muffin tin with paper muffin cups or coat with cooking spray.
2. Combine applesauce, canola oil, sugar and extracts in a small bowl. In a large bowl, whisk together the oat flour, cocoa, baking powder, baking soda, salt and cinnamon. Add applesauce mixture to flour mixture and stir until blended. Then stir in chocolate chips.
3. Working quickly, pour into muffin cups and bake for 20-22 minutes, rotating pan a half turn after 10 minutes. Muffins are done when the tops are firm to the touch.

Makes 8 muffins.
