Italian Chees and Sausage Frittata

13 eggs(beaten)1 pound of ricotta cheese4 ounces fresh mozzarella cheese (cubed)1/2 pound Italian Sausage (crumbled up and skin removed)3 Tablespoon Canola Oil
Beat eggs in large bowl.
Heat frying pan with oil and brown the italian sausage. Do not overcook. Just slightly done.
Put ricotta and mozzarella in with eggs and beat lightly breaking up the ricotta slightly.
Once sausage is slightly cooked, add egg mixture to frying pan. Cook one side until set (similar to cooking an omlet). When ready, place a flat plate large enough to cover the top of frying pan and flip the egg mixture onto the plate, then slide back into the fryng pan to cook other side.
When cooked, flip onto flat plate again, and serve warm.
If you have a double sided frying pay, this works well. This is basically an italian style omlet. Serve with toast or italian bread. Great for any time of the day.
