Beans, black, 2 cup olive oil, Onions, raw, 1 cup, chopped Garlic, 4 cloves *Yams, 2 cup, cubes Carrots, 2 Celery, 2 Red Ripe Tomatoes, 1.5 cup, chopped or sliced Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) choppedZucchini, .75 cup, sliced Chilli paste, 3 tbsp or to tastecinnamon, 1 tbspcumin, 2 tspbasil, dried, 2 tbsp3 cups water
Steam yams and carrot till nearly soft. Dry roast cinnamon and cumin for 5 minutes. Cook onion and garlic in olive oil until carmelized. Add yams, carrots, black beans, pepper, celery and tomatoes. Stir spices in water in a separate bowl, and pour over top of vegetable mix. Cover and cook for 45 minutes on medium heat, stirring occasionally. Nice to serve over roasted spaghetti squash.
