Ingredients
1 Cup garbanzo beans, rinsed and drained1 Cup diced English cucumber½ Cup raw carrots, chopped½ cup red and/ or green bell red pepper2 green onions, chopped¼ cup sunflower seeds¼ red onion, diced1/8 cup fresh parsley1 cup wheat (hard red spring)Dressing1 cup whey, sweet fluid1 cup low fat cottage cheese2 T apple cider vinegar1tsp crushed garlic1 tsp sea salt1 tsp black pepper
Directions
In a small bowl, mix together all the dressing ingredients and set aside. Combine the salad ingredients and then pour the dressing over and toss. You can make coleslaw out of this by shredding the carrot, cucumber, bell peppers, onions and parsley in a food processor.
