Easy Spanish Rice

1.5 cups uncooked long or medium grain rice2.5 cups chicken broth1 cup plain tomato sauce*3 cloves chopped garlic1 medium onion, chopped2 Tbls. Olive Oil*substituting with diced tomatoes works nicely, too.
Makes approximately 10-1/2 cup servings
- Heat oil in a medium saucepan over medium heat.
- Add garlic and onion and saute for 1-2 minutes, until softened.
- Add in dry rice and stir for about 5 minutes until rice turns a golden brown.
- Add in broth and tomato sauce slowly while stirring.
- Stir and bring to a boil.
Once ingredients boil, turn the heat down to simmer and cover with lid. Simmer 20 minutes.
