Turkey Ragout

1.5 lb boneless, skinless, turkey breast cut into 2 inch pieces2 cloves garlic, minced2 small zucchini, sliced in 1/2 in slices1 can (14.5 oz) unsalted, diced tomatoes with juice1/2 tsp sea salt1/2 tsp black pepper1/2 tsp thyme1/2 tsp oregano
1. Spray a large skillet with cooking spray and place over medium heat. Add turkey and brown for 2 to 3 minutes. Turn turkey pieces with spatula and add garlic, zucchini, tomatoes, and remaining seasonings.
2. Saute for 5 minutes, stirring once of twice so that the meat is browned on top and the veggies begin to sizzle. Cover with a lid, turn heat to low ad simmer for 10 to 12 minutes.
3. Serve with pasta or bread.
