Veg sausage and sauteed vegetable pasta

Ingredients
2 links Tofurky italian sausage (or other vegetarian sausage), 1 TB olive oil, 2 medium tomatoes, or one large, 1 onion, 2 cloves of minced garlic, a handful of spinach, salt, pepper, red pepper flakes or cayenne pepper, red wine, rosemary, pasta, parmesan or other cheese (optional).
Directions
Heat a skillet, add 1 TB olive oil. Add minced garlic and julienned onions. Once browned add diced tomato and sausage, then add spinch as well as herbs and spices to taste. Add a dash of red wine to deglaze, cook it down and serve over pasta. Top with cheese if desired.
