1-15 OZ Can Libby's Pumpkin1 2/3 cups unsweetened applesauce1 cup Splenda1 cup Eggbeaters1 teaspoon Vanilla3 1/3 cups flour2 teaspoons baking soda1/2 teaspoon baking powder1 1/2 teaspoon salt1 tblespoon cinnamon (I use more)1 tablespoon nutmeg1 teaspoon ground cloves
Makes 24 muffins/
Preheat oven to 350. Beat the eggbeaters, vanilla and the Splenda. Mix in the pumkin and applesauce. Sift the flour with the other dy ingredients and gradually add o the pumpkin mix. Mix all together and pour into well-sprayed (Pam) muffin tins. Bake at 350 for about 25 minutes.
