Lower Sodium Pork Loin Roast a la Crock Pot

1 lb Pork tenderloin.5 medium sweet onion, sliced5 large red potatoes w/skin, sliced20 baby carrots1 can lower sodium beef broth1 can Healthy Request cream of mushroom soup
Place vegetables in crock pot, then add pork loin. Combine beef broth and mushroom soup, pour over top of pork and vegetables. Cook on Low 4-6 hours.

My crockpot didn't cook the pork's internal temp high enough on the low setting so had to turn it up to high at the end. The pork roast was also setting up on top of all the vegetables which may have kept it from getting as hot as it should. I will start out on high if I try this again. - 4/4/11
